Tuscan Style Herbed Potato Salad

Enjoy our Tuscan Style Herbed Potato Salad, a favorite potato dish that travels well for a picnic, potluck or a satisfying dinner at home. We love using yellow-fleshed varieties like Yukon Gem in this dish.

  • 6 medium potatoes, cooked and cut into thick slices (yellow fleshed varieties like Yukon Gem are perfect)
  • 3 T good fruity olive oil
  • 1 large or 2 small cloves of garlic, very finely minced
  • 1 1/2 T balsamic vinegar
  • 3 T finely chopped fresh parsley
  • 3 T finely chopped fresh chives
  • 3 T finely chopped fresh basil
  • 1/4 tsp salt, or to taste
  • 1/4 tsp freshly ground pepper

Prepare potatoes, set aside. Combine all the remaining ingredients, then toss lightly with the potatoes. Allow to stand about 1/2 hour to blend flavors. Taste for seasoning before serving at room temperature.

Serves 6
